Vegetable Thai Pad Gluten Free Recipe
Millions of Americans are gluten intolerant, and many don’t even know it! Today Dr. Oz did a show about Celiac Disease. He talked about the symptoms and solutions for living a healthy gluten free life. After the opening segment, Dr. Oz invited Elizabeth Hasslebeck (co-host of The View) to share one of her favorite Vegetable Pad Thai gluten free recipe. Elizabeth Hasslebeck also is the author of a cookbook, Deliciously G Free, that is full of delicious gluten free recipes.
Gluten Free Veggie Pad Thai Recipe
Ingredients :
- 1/2 pound gluten free pasta noodles
- 1/3 cup of fresh lime juice (juice from freshly squeezed limes is preferred)
- 3 tablespoons of gluten free fish sauce
- 1 tablespoon of gluten free rice vinegar
- 1 tablespoon of sugar
- 1tablespoon of canola oil
- 1 tablespoon of gluten free chili sauce
- 1 finely minced shallot
- 2 cloves of garlic (use either minced garlic or finely chop up a clove)
- 1 teaspoon of olive oil
- 2 lightly beaten eggs
- 1/4 cup unsalted roasted (chopped) peanuts
- 2 Cups of bean sprouts
- 1/2 cup cilantro leaves
- Optional : add chicken, shrimp, or beef
Directions :
- Cook the noodles and strain in a colander
- Mix ingredients together (minus the eggs, chopped peanuts, sprouts, and scallions)
- Stir sauce into the noodles
- Add peanuts, sprouts, and scallions to the top of the noodles
- Cook the lightly beaten eggs into an omelet
- Cut the omelet into strips
- Add omelet to noodles
- Garnish with the cilantro leaves
Like Dr. Oz normally does, he compared this healthy recipe to a comparable take out recipe that you would find in a restaurant. The results were :
Take out Veggie Pad Thai Recipe : 750 calories and 23 grams of fat
Elizabeth’s Gluten Free Recipe : 410 Calories and 11 grams of fat
I’m not gluten intolerant, but I must say that this recipe looked really good. Dr. Oz had three guests from the audience sample the recipe and all three loved it!
